White Cupcakes

White Cupcakes !!!
This snack was my great grandmother's and my grandmother's favorite sweet thing to eat since they didn't really eat sweets. I learned how to make this snack when I was around 9 or 10 years old I knew many other recipes at younger ages but I learned this one around 9 or 10. I was just sitting in the kitchen with my grandmother because she was cooking us dinner. I said "Grandmom can we make a cake or something" and she said "Yea sure, we can make white cupcakes. My mother taught me how to make it when I was younger like you and I fell in love with it ever since." 

After she got done making dinner, she gathered everything we needed for the cupcakes such as flour,eggs,milk,etc, and we started mixing everything together. I only love this recipe because it was my great grandmother's favorite and she's almost 90. I think she still looks good but she's been in and out of the hospital. she's doing fine but I think it's something wrong with her lungs. 

In other words, I know she will be okay and all I do is pray for her because I love her so much.

White cupcakes are the second best to chocolate cupcakes. Sorry guys but chocolate will always win my heart. !! But here is how you make them

Ingredients 
  1. 1 1/2 cups of flour
  2. 1 teaspoon of baking powder 
  3. 1/2 teaspoon of fine salt
  4. 1/2 cup milk, room temperature
  5. 1 teaspoon of vanilla extract
  6. 1 stick ( 4 ounces ) unsalted butter, room temperature 
  7.  3/4 cup sugar
  8. 2 large white eggs, room temperature
  9. Fondant flower, for garnish, optional 
After you make these cupcakes you are going to love me because they are so good like just delicious.

Directions 
  1. Preheat the oven to 350 degrees, make sure you have a non-stick 12-cup pan & add the cupcake liners inside. 
  2. Mix the flour, baking powder, and salt into a medium-sized bowl. Then stir the milk and vanilla into a small bowl & set it aside. 
  3. Next, Add the butter into a large stand mixer with a paddle attachment ( or use a large bowl if using an electric mixer ).
  4. Then, Mix it on a low speed until the butter is smooth which should take about 1 minute. Gradually beat in 1/2 cup of sugar. Increase the speed to high and beat until its light and fluffy. Scrape down the sides of the bowl as needed. 
  5. Then, Reduce the speed of the mixer to low. Add about one-third of the flour mixture and beat until just combined. Add half the milk mixture and beat until smooth. Repeat, adding flour, then milk, and the rest of the flour, stopping and scraping down the sides of the bowl as needed. Increase the mixer speed to medium and beat briefly to make a smooth batter. 
  6. Then, Put the egg whites in a clean bowl. Whip on high speed until foamy. Gradually add the remaining 1/4 cup sugar and continue to beat until the egg whites are glossy and hold stiff peaks which should take about 10 minutes. Fold the whites into the batter in three batches. Divide the cake batter evenly between the liners. 
  7. Then, Bake until a tester inserted in the center of the cakes comes out clean, rotating the pan about halfway through which should take about 20 minutes. 
  8. Last, Cool the cupcakes in the pan for about 10 minutes and then remove the cupcakes from the pan and let them cool completely.
